With a wealth of expertise in food and drink, catering, and fine dining, Colin aims to elevate The Grand’s culinary offerings and establish its reputation as a premier dining destination.
Having developed a passion for the culinary arts during his early years at Southport College, Colin’s journey has taken him to renowned establishments across the UK. His career began on the enchanting Isle of Man and the picturesque Channel Islands before returning to the mainland. Notably, he held a prestigious position at the three AA Rosette-awarded Red Star Hotel, The Rampsbeck Country House in Cumbria, and later moved to Scotland, where he served as a key member of the team at the acclaimed One Devonshire Gardens, also holding three AA Rosettes, in Glasgow.
Colin’s culinary mastery extended to notable venues such as the four Red Star-awarded Rookery Hall and the three AA Rosette-winning New Hall Hotel in Sutton Coldfield. His expertise further flourished in executive chef roles at Cheshire’s Shrigley Hall, gaining recognition with rosettes, and the esteemed Lodore Falls, a premier spa resort in Cumbria. Recently, he spent seven successful years at the renowned Champneys Spa Resort, Mottram Hall, where he further solidified his reputation and earned two rosettes.
Returning to his roots in Southport, Colin’s appointment as Director of Food for The Mikhail Hotels & Leisure Group signifies his commitment to enhancing The Grand’s already exceptional culinary offerings. Sharing his ambitions for the iconic venue, Colin expressed, “I will leverage my extensive experience gained from working in high-class establishments to develop and mentor my talented team of chefs at The Grand. Together, we will craft a remarkable dining experience for our guests.”
Central to his vision is the revitalisation of The Grand Brasserie, where Colin has curated an array of tantalising dishes. Notably, he plans to redefine the afternoon tea experience, promising it to be the finest in town. “I want The Grand to become the ultimate destination for afternoon tea, and our restaurant manager, Tibu, will ensure that every guest receives exceptional service, resulting in a truly grand experience,” Colin added.
